Blueberry Mango Smoothie Bowl

I was never a huge fan of smoothie bowls, until I had this amazing acai bowl at a local juicery in my area. It was super expensive, so I thought, it can’t be that hard to make myself! And, I was right. 

Smoothie bowls are a great way to incorporate a lot of fruit in your diet. I used blueberries and mango in this particular smoothie bowl, but you can combine any of your favorite fruits to make it different each time! Blueberries are really high in antioxidants and contain lots of healthy phytochemicals! Mangoes are rich in Vitamin C and really give the smoothie bowl, a tropical feel.

The concept is simple: 4 ingredients to blend and LOTS of toppings!

Ingredients:

– 1/2 cup Fresh Blueberries

– 1/2 cup Frozen Mango

– 1/4 cup Almond Milk

– 1/4 cup Ice

– Toppings of Choice: Nuts, Seeds, Nut Butter, Fruits, Maple Syrup, etc.

Directions:

1.) Blend the blueberries, mango, almond milk, and ice until it is a well combined soft-serve consistency. If there is too much liquid, you can always freeze for 10-20 minutes before eating or pulse some more ice in your blender. I used my Magic Bullet and it worked okay, but if you have a BlendTech or a Vitamix, I’m sure it would work even better! 

2.) Time for toppings! You can include just about anything you like but I included cashews, pumpkin seeds, chia seeds, peanut butter, honey, and extra blueberries.

3.) Enjoy!
