Breakfast Tofu Scramble

Tofu is always a favorite, and I love this idea of innovating the traditional recipe of scrambled eggs. Starting your morning off with protein is always a great way to feel satiated throughout the day, and tofu does a great job of helping you feel this way! It’s also super easy to make and takes no more than 10-15 min!

Ingredients:

– Olive Oil (to drizzle)

– 1 (16 oz) Block of Tofu

– 1/2 Roma Tomato

– 1/2 Bell Pepper

– Salt and Pepper to Taste

– 1/2 tsp Turmeric

– 1 tsp Oregano (I added a Sun Dried Tomato Seasoning too!)

– 1 tsp Red Pepper Flakes

Directions:

1.) Crush a block of tofu and mash it until it is no longer in its block form. You can use your hands or a fork to do this.

2.) In a pan, add olive oil to coat the surface and add your tofu. Cook for about 3-4 minutes until the water from the tofu is absorbed.

3.) Add in the chopped roma tomato and bell pepper, and add all of the spices (salt, pepper, turmeric, oregano, red pepper flakes). Cook for another 5-6 minutes.

4.) Enjoy!


I love serving this delicious breakfast tofu scramble with some chopped avocado and toast. Feel free to garnish with herbs or add some other superfood greens to your dish!
