Creamy Hummus Pasta
Here is the quickest pasta ever! It takes only 15 minutes, so I’m in love! Hummus is an awesome ingredient to use, since it’s very clean (whole food based) as compared to many pasta sauces in a jar. Plus it’s rich in protein and is very satiating! It has the creaminess of an alfredo sauce but has no dairy, so it’s completely vegan.Â
There are many different types of hummus you can use for your sauce, but my favorites include the Cedar’s Organic Jalapeno Hummus (what I used for this recipe) and any of the Trader’s Joe Hummus varieties. The most important thing to do is to read the label to ensure that the hummus doesn’t contain any preservatives or additives, to make sure you aren’t consuming any unnecessary chemicals that could mess with your hormones. As always, the best option is to make your own hummus, but I am yet to find an easy recipe for that. Will keep you updated…
Now, on to the recipe!
Ingredients:
– Olive Oil (to drizzle)
– 1 Box Pasta of your Choice (I used Banza Chickpea Pasta)
– 1 8 oz Container of Hummus of your Choice
– Seasonings: 1 tsp Oregano, 1 tsp Red Pepper Flakes, 1 tbsp Dried Herbs like Rosemary/Parsley/Basil, Garlic Powder
– 1/2 cup of Grape Tomatoes (Halved)
– 1/2 cup of Spinach
– 1/2 cup of Basil

Directions:
1.) Cook pasta according to the directions on the box, till it is soft. DO NOT DRAIN THE PASTA!
2.) Slowly dump out about 90% of the water in your pot, and leave the remaining 10% of the water in the pot in which you cooked your pasta
3.) Add in the hummus from the container and mix well. The pasta water combined with the hummus, will give the sauce its creamy consistency.Â
4.) Cut and transfer the grape tomatoes, spinach, and basil to the pasta. Mix and cook until the spinach and basil are slightly wilted.
5.) Add all of your seasonings: oregano, red pepper flakes, dried herbs, garlic powder, your pick! Mix again.
6.) Enjoy!

This hummus pasta is so delicious and creamy. It is also super versatile. I can imagine it being a great lunchtime pasta salad recipe, if you add some more beans and veggies!
