Fresh and Healthy Quinoa Salad

This quinoa salad is so fresh and flavorful, it would serve as a great lunch recipe! It is also super easy to make and you can easily use it for meal prep (enjoy it for 2-3 days)! 

Quinoa has so many health benefits. It is not only a great source of plant-based fiber and protein, but is also rich in iron! As a complex carbohydrate, it has a low glycemic index (GI) and it’s even gluten free!

Ingredients:

– 1.5 Cup Quinoa

– 3 Cups Water

– 1 Can of Legumes (Red Kidney Beans, Black Beans, Chickpeas)

– 1 Small Onion

– 1 Bell Pepper (Green/Yellow/Red)

– 1 Medium Sized Roma Tomato

– Handful of Greens (any kind; spinach, kale, arugula, etc.)

– 1/2 cup of Cilantro

– 1 Lemon

– 1/4 cup Olive Oil

– Spices: 1 Tsp Salt, 1 Tsp Pepper, 1 tbsp Cumin Powder, Oregano, Red Pepper Flakes

 

Directions:

1.) Cook the quinoa in water. Stir occasionally to avoid letting the quinoa stick to the bottom. When the quinoa is cooked, let it cool for 15 minutes. 

2.) Chop the onion, bell pepper, tomato, greens, and cilantro and add to a large salad bowl. Add in the can of legumes.

3.) In a separate bowl, add the juice of 1 lemon, the olive oil, and all of your spices to make your dressing.

4.) Once cooled add your quinoa and dressing to the veggies and legumes!

 

For best taste, leave the salad in the refrigerator for at least 30 minutes before serving and enjoy!
