Healthy Blueberry Cobbler

Summer berries are my favorite! I have been loving making smoothies with blueberries, strawberries, and blackberries. It’s just so delicious and full of antioxidants!!

 

Here’s a fun summer time dessert that you can enjoy as we approach the fall season. It’s a spin on the traditional peach cobbler but made with almond flour, oats, and berries! Hope you enjoy.

Ingredients:

Berry Base

– 2 cups fresh blueberries

– 3 tbsp maple syrup

– 2 tbsp oil of choice

– 1 tbsp lemon juice

– 1 tbsp cornstarch

Crumb Topping 

– 1/2 cup almond flour

– 1/2 cup rolled oats

– 1 tsp cinnamon

– 1/4 cup maple syrup

– 1 tsp oil of choice

– 1 tbsp sunflower/pumpkin seeds

– Almond Milk to achieve Batter Consistency

 

Berry Base

1.) Add blueberries, maple syrup, oil, lemon juice, and cornstarch to a mixing bowl and combine well.

2.) Transfer coated berries to the baking pan.

Crumb Topping

1.) Combine the almond flour, rolled oats, cinnamon, maple syrup, oil, and sunflower/pumpkin seeds in a bowl and mix well.

2.) Slowly add in almond milk until the crumb topping achieves a batter-like consistency.

3.) Carefully spoon the crumb topping over the blueberries. Be sure to cover as many of the blueberries as possible and make sure it is a smooth layer. 

4.) Top with nuts of choice if desired (I added pecans).

Bake at 400 Degrees for 20-25 min till crumb topping is golden brown and enjoy!!
