Quinoa and Black Bean Burgers – Vegan and Gluten Free

These vegan and gluten-free quinoa and black bean burgers are so delicious! I actually came up with the recipe when I was looking for a fun 4th of July meal to enjoy with my family. In true American fashion, I decided to make burgers and these definitely hit the spot!! I paired these burgers with some homemade oven baked fries and watermelon salad. Definitely plan to make these again 🙂

Ingredients:

– 1/2 cup Quinoa

– 1 cup water

– 1 small Onion (finely diced)

– 1.5 cans Black Beans

– Tapioca Flour (Binding Agent)

– Sriracha Sauce

– Spices: 1 Tsp Salt, 1 Tsp Pepper, 1 Tbsp Cumin Powder, 1 Packet Fajita Seasoning

 

Directions:

1.) Add the quinoa and water to a pot. Cook the quinoa until no water remains and set aside. 

2.) In a separate pan, saute the onions and add the spices + a drizzle of sriracha sauce. Cook until they become fragrant and a golden brown color. 

3.) Add in the cooked quinoa and black beans. Mix well till it is well combined. 

4.) At this point, the mixture should be a little loose. Add in the tapioca flour, 2 tbsp at a time, until a dough like consistency is achieved. Add water if the mixture becomes too tight. 

4.) Set aside for 30 min to let the burger mixture cool and harden even more. 

5.) Shape into burger patties and bake in the oven for 20-25 minutes at 450 F. 

6.) Pull out of the oven and assemble your burger. Use bread of your choice (white/wheat/gluten-free), and top with greens, tomatoes, pickles, onions, as well as condiments (ketchup/mustard/vegan mayonnaise)!!
