Easy Lunch Idea: Sweet Potato Fries + Black Beans and Quinoa

This is a super simple meal idea that is wholesome and satiating! Sweet potatoes are rich in Vitamin A and are considered to be anti-inflammatory, something that is especially important for hormone health. The quinoa and black beans provide just the right amount of protein to keep you full so that you don’t feel hungry all the time!

As a college student, I love quick and easy meals and this is it. The sweet potatoes can be cooked in the oven, the black beans came out of a can, and the quinoa can be cooked in the microwave. Easy peasy 🙂

Ingredients:

– 1 Packet Sweet Potato Cut into Fry Shapes/1 Sweet Potato Cut into Fry Shapes

– Oil of Choice to Drizzle

– Seasonings to Taste: Salt, Pepper, Oregano, Everything but the Bagel Seasoning

– 1 tsp Cumin Powder

– 1 tsp Tajin seasoning

– 2 tsp Paprika

– 1/3 Can Black Beans

– 1/2 cup Cooked Quinoa

 

 

Directions:

1.) In a mixing bowl, combine sweet potato pieces with oil and all of the seasonings.

2.) Bake in the oven at 400 for 25 minutes.

3.) Drain a can of black beans and rinse.

4.) Cook quinoa: Either in microwave per directions OR in 1 cup water on the stove

5.) Assemble your bowl!! Add your quinoa, black beans, and baked sweet potato fries.
