Pineapple Upside Down Cupcakes (Gluten-Free,  Dairy-Free, and Refined Sugar-Free)

These pineapple upside down cupcakes are such a yummy treat to enjoy in the summer time! And the best part: no refined sugar, no refined flours, gluten-free and dairy free! 

When I first scoured the internet for a pineapple cake recipe that was somewhat healthy, it was hard to find! I finally decided to take inspiration from multiple different recipes and make my own 🙂 The hardest part about upside down cakes is the glorious FLIP. A yummy-tasting pineapple upside down cake can immediately turn out to be a flop if it crumbles when flipped. For this reason, I decided to make cupcakes instead. The smaller surface area makes in WAY easier to flip and also makes it easy to serve to people!!

So here’s the recipe (for 12 cupcakes)!

Ingredients:

– Fresh Pineapple (6-8 thinly sliced rings)

– Any oil of your choice (Olive or Coconut Oil works great!) – 3 tbsp for batter and some for greasing the cupcake tins

– 1 cup almond flour

– 2 eggs

– 1/2 tsp baking powder

– 1 tsp vanilla extract

– 5 tbsp honey + some for drizzle

– Cherries (topping!)

 

Directions:

Preheat oven to 350 F. Grease the bottom of each of the 12 cupcake tins (liberally) with oil of your choice. Use the thinly sliced rings and arrange at the bottom of each of the cupcake tins. Drizzle the pineapple with some honey over the top. Place in the oven for approximately 15 minutes so the honey melts into the pineapple rings.

In a separate bowl, mix the almond flour with the baking powder. Add in the eggs, oil, vanilla extract, and honey. Mix till it is well combined and creates a batter consistency! 

After removing the baked pineapples from the oven, add the cake batter evenly into each of the 12 cupcake tins. Place in the oven once again and bake for 35 minutes until the top is golden brown. 

Remove from the oven and let the cupcakes cool for about 10 minutes. Flip all of the cupcakes onto a large tray. If they don’t flip immediately, DO NOT shake! Just leave them in the upside-down position for 5-10 and they should slide down! 

Time to serve 🙂 Decorate with some cherries and enjoy!
